The much loved Bristol Arms Hotel in Sydney has been transformed into an upscale rooftop bar that will dish up some of the city’s best Greek food.
The old pub on Sussex Street was home to a neon-splashed 90’s mecca for Sydneysiders who partied to Wham!, Madonna and Prince like the 80’s had never really ended at the iconic Retro club.
But now chef Peter Conistis, of Alpha and Ammos fame, considered by many to be the father on modern Greek cuisine in Sydney, has set his sights on a luxe revamp of what will now be called The Bristol.
Rooftop Kouzina opened on Wednesday with its no-expense-spared, plush new interiors that make it hard to believe it was ever a ‘dingy’ pub.
The expansive rooftop space has a modern Mediterranean vibe of pale peach and coral colours, 60’s inspired furniture and striking terrazzo-style tables.
Chef Conistis has recreated the famous Athenian souvlaki bar in Australia and plans to serve lamb kokoretsi sizzling straight off the spit as well as lamb souvlaki.
The bar will be pouring an extensive selection of fine wine by the glass and a fun mix of premium classic and exotic cocktails.
The rooftop venue will be followed in a few weeks by another Greek restaurant, Ela Ela, with another four venues to come, making The Bristol a ‘multi-level experience’.

With the city’s hospitality scene plagued by the closure of many institutions such as Tetsuya’s and The Unicorn Hotel – the new opening is welcome news for Sydneysiders looking for some fun.
Locals and travellers were excited to hear about the The Bristol’s rebirth and its vibe of ‘dance floors, new doors’, with many keen to visit.
‘Can’t wait to check it out when I’m back in Sydney!’ one said
‘Now we’re talking,’ another said.
‘A legend, reborn,’ a third chimed in.
One middle aged clubber said that if the new venue could guarantee the same fun-loving atmosphere as Retro, then she might consider coming.
But despite Rooftop Kouzina having a DJ spinning tracks every Thursday to Saturday – one fan of the 90’s club was struggling to get excited about The Bristol’s new glow up.
‘Bring back the old Retro,’ he said.
Another said he was sick of Sydney transforming into a ‘bland, samey strip’ that looked ‘far from lived in’.
‘Give us a break and keep your mitts off our favourite watering holes,’ he wrote.
